Uminono transforms an existing Prahran restaurant into an intimate dining environment centred on the relationship between chef and guest. The design was developed around the operational requirements of chef Arnaud Laidebeur, with the main counter carefully resolved to bring preparation, service, equipment and dining together within a single continuous element.
HDZN developed the spatial planning, interior design, material palette and detailing throughout the restaurant, balancing the practical demands of a working kitchen with the atmosphere of the dining experience. Timber, stone, stainless steel and darker finishes create warmth and depth, while integrated lighting, joinery and carefully resolved junctions reinforce the clarity of the overall design.
From initial planning and counter development through material selection, technical documentation, permits and coordination, the project was resolved as a complete hospitality environment. The result is a compact restaurant where operation, materiality and the experience of dining are closely connected.
